A Great Summer Vegetable

At my CSA this week I found a new vegetable: kohlrabi. Once I got home I went to my ND PantryKohlrabi to find out more about this summer vegetable.

One cup of kohlrabi has 36 calories, 0g fat, 8g carbs, 5g fiber, and 2g protein. This is great combination for weight loss - low cal and high fiber!

Some ideas for using kohlrabi:
Peel it and cut it into sticks and dip in hummus, salsa or guacamole.
Kohlrabi Slivers and Pea Shoots with Sesame Dressing
Cut it into slices and place in a bowl; toss with olive oil and sprinkle with salt and pepper. Wrap in foil and grill for 10-12 minutes.

Hi Dana, I've actually been eating this veggie for years! You can eat it cooked in soups to replace turn-ups (they are actually sweeter than a turn-up) in the winter time or just eat raw to munch on with or without the hummus! The smaller ones are actually milder and sweeter. The really big ones can be pithy at times.
