Looks like a tasty recipe. I live on the Gulf Coast and enjoyed lots of this mild, light-textured fish (red snapper).
It doesn't have as much of the omega-3 fatty acids as do the cold-water fatty fish, but red snapper is probably healthier than red meat loaded with saturated fats.
For maximal omega-3 fatty acids, eat salmon, trout, sardines, herring, albacore/white tuna, sea bass, swordfish, halibut, and a few others. This recipe may work well with one of these other fish subsituted for the snapper.
