A Quick Cooking Whole Grain

238939_116 Quinoa, which I suggested as a side for Garlic Roasted Chicken Breasts, is a whole grain that cooks up fast. Unlike rice which can take up to 45 minutes to prepare, quinoa is done in about 12-15 minutes.

Black Bean and Tomato Quinoa is a dish that is low in Cholesterol and a good source of Dietary Fiber, containing 9 grams. It is also a good source of Vitamin A and Vitamin C, and a very good source of Vitamin K. Quinoa is also a complete protein and this to this dish it contributes 10 grams, which is equivalent to the same amount of protein in about 1.5 ounces of chicken.

Besides a being a great side dish for any recipe it can make a great lunch as well - just fill up a whole wheat pita or tortilla wrap and enjoy! A complete nutritional profile of this recipe is available. You can save this recipe to your Nutrition Data pantry for future reference.
